Bellissima Quesadilla

 

This healthy dish will leave you thinking I really could be vegetarian, no problem! I threw this together for lunch because I'm craving something healthy and clean after those hearty winter meals. It was an instant family favorite so I wrote it down to make again...and again...and again. I'm missing our backyard garden of fresh vegetables so badly, but at least these market vegetables will help me get through. Try this quick recipe for a simple and quick meal!

Start by smashing your Avocado in a bowl, add Italian seasoning, salt and pepper, red pepper flakes, and shredded parmesan cheese. Mix to incorporate, taste to adjust seasoning and set to the side.

In a skillet over med, heat olive oil and cook mushrooms until they start to sweat. Add garlic and cook an additional minute. Lastly add halved cherry tomatoes, and a pinch on salt and pepper and cook stirring gently until they just start to juice. Turn off heat and set to the side.

To your Wraps, spoon on avocado mixture and spread over half, layer on purple onion, spinach, cooked mushroom and tomato mixture and mozzarella splitting ingredients between both wraps. On each wrap, fold the empty wrap side over ingredients and toast each one in a pan. Cut in triangles and serve with homemade or store bought marianara.










INGREDIENTS:

1 tsp diced garlic
8 cherry tomatoes
1 cup fresh spinach
4 oz mozzarella
2 large Sundried Tomato Wraps (sub gluten free wraps)
