Growing up we had brunch on Sundays and it's something I continue to do with my family. I absolutely adore it!! Making breakfast casseroles remind me of my Dad so making them and eating them brings back so many memories of him. They were always so delicious. Today, I've gotten more adventurous with them, adding different fresh herbs, meats, and cheeses. I have never been disappointed in any combinations. They are basically easy and fool-proof! Just mix, pour and bake!
Start by preheating the oven 400 degrees F. On the stove top heat a skillet on med/high heat, sautee onion until it starts to sweat, add red bell pepper and cook until soft. Add Conecah Sausage, and red pepper flakes. Cook for 3 min and turn off heat. Stir in fresh herbs. In a bowl, scramble eggs with salt, pepper and heavy cream. Stir in Parmesan and Gouda. Add the cooked onion, pepper and Conecah mix. Pour in Casserole dish and cook 30 min.

Once the casserole has cooked, toast bagels under the broiler. Remove once toasted and spread goat cheese on one side. This kind came from Aldi and is super delicious!

Return bagel halves that have goat cheese back to broiler melt for approx 1-2 min. Remove from broiler.

Cut Egg Casserole into squares. Serve Egg Casserole between toasted bagel halves (one plain side and one side with melted goat cheese.) Serve with fresh fruit and coffee!!

4 bagels
2 TBS blueberry goat cheese
