When my Chinese brother came home to Alabama for a visit he made us this quick and delicious marinated cucumber snack with our garden cucumbers. I loved it and was amazed at how super easy and delicious it was!!! When I made up this dish I included his marniated cucumbers and it was a perfect pairing!!!
You can use regular Pad Thai noodles but I love these Rice Pad Thai noodles. The consistency is more chewy but they are delicious!!! Gluten free too!!!

Start out by chopping the cucumbers. Add to a small bowl and cover with soy sauce and diced ginger. Stir and place in refrigerator.
Next take cabbage, garlic clove, green onion and ginger and place in food processor to chop finely. Add to a large bowl. Next add ground pork, hoisin, sesame oil, Sriracha and white pepper. Mix and add to a skillet over medium heat. Cook until meat is completely done.

While the meat mixture is cooking heat water to a boil in a pot. Cook Pad Thai noodles according to package directions.
In a seperate pot heat 1 cup of soy sauce, honey, 1 tsp Sriracha, and peanut butter until the sauce is simmering. Remkve from heat and pour over Pad Thai Noodles. Add noodle mixture to a serving bowl, top with meat mixture, marinated cucumbers and garnish with chopped peanuts and green onions.
